About Mead

Mead, often known as honey wine, is brewed from honey and water. The brewing process is known as Mazing. Basic mead will be made with just honey, water and yeast, but often fruit, herbs and spices are added for variety. Mazing begins with a combination of honey and water, called must. Wine yeast is then added to the must, and the mix is allowed to ferment. The fermentation of mead lasts longer than for beer, and may take many months. The wine yeasts used ferment more completely than those of beer, resulting in a higher alcoholic content, often between 10-18%. Mead is often sweet and delicate, but its flavor is heavily influenced by the spices added.
