Specialty ciders and perries will be clear and most often pale to gold, although color will be appropriate to the fruits from which the beverage is produced. As with standard ciders and perries, aroma will be fruity. Specialty ciders and perries differ from their standard counterparts in flavor. These styles may use a combination of fruit juices and spices, regional types of fruit, or simply have higher alcohol content than standard ciders and perries.
