Meads of this type will have an aroma with distinctive notes of honey and spice. These spices can range from ginger to chamomile and lavender. The flavor of these meads will be quite dependent on the information that the brewer gives, but expect a harmonious marriage of the flavors of honey and spice. These meads will vary greatly; they finish sweet to dry and, with the addition of certain spices, might become quite bitter.
